Abstract

Purpose

The purpose of this paper is to explore the readiness of young Italian people to consume insects and the psychosocial determinants associated with edible insect consumption, in order to evaluate whether insect-based food could be an alternative food source.

Design/methodology/approach

An explorative study was conducted, using focus group interviews as the technique for data collection. In total, 32 consumers, aged 20-35 years took part in five focus group interviews.

Findings

Significant determinants comprised appearance, farming and sustainability. Participants’ willingness to eat insect-based food is dependent on the form in which the products are presented to them. Crustaceans were frequently mentioned as a comparison in terms of distaste. Lack of practice in preparation was a major barrier to consumption. To expand consumption participants suggested an active role for public health institutions. Even though with some uncertainty, there are some people prepared to consume insects.

Research limitations/implications

Due to the restricted size of the sample survey, the findings are considered as exploratory research. Further investigation is required among other young adults in order to delineate promotional strategies.

Abstract

Purpose

Governments are increasingly turning to artificial intelligence (AI) algorithmic systems to increase efficiency and effectiveness of public service delivery. While the diffusion of AI offers several desirable benefits, caution and attention should be posed to the accountability of AI algorithm decision-making systems in the public sector. The purpose of this paper is to establish the main challenges that an AI algorithm might bring about to public service accountability. In doing so, the paper also delineates future avenues of investigation for scholars.

Design/methodology/approach

This paper builds on previous literature and anecdotal cases of AI applications in public services, drawing on streams of literature from accounting, public administration and information technology ethics.

Findings

Based on previous literature, the paper highlights the accountability gaps that AI can bring about and the possible countermeasures. The introduction of AI algorithms in public services modifies the chain of responsibility. This distributed responsibility requires an accountability governance, together with technical solutions, to meet multiple accountabilities and close the accountability gaps. The paper also delineates a research agenda for accounting scholars to make accountability more “intelligent”.

Originality/value

The findings of the paper shed new light and perspective on how public service accountability in AI should be considered and addressed. The results developed in this paper will stimulate scholars to explore, also from an interdisciplinary perspective, the issues public service organizations are facing to make AI algorithms accountable.

Abstract

Set against the background of uncertainty and crisis generated by COVID-19, policymakers, destination marketers and tourism and hospitality managers are struggling in trying to envision how, and till when, tourist behaviour will be changed and transformed by this pandemic and how tourists will select the accommodation where to stay during their holiday.

So far, a limited number of academic studies have been devoted to analyzing how travellers will select the accommodation for their holidays. This urges academicians to fill this gap with the aim to provide practitioners with fresh and insightful knowledge to support their decision-making in a tourism era where everyone seems to be shifting towards a ‘new normality’ of uncertain duration.

This study was therefore carried out to contribute to this debate by presenting and discussing findings of an empirical investigation applying a factor–cluster analysis on a sample of 225 French consumers/travellers to profile them based on accommodation selection criteria. Further, a series of chi-square tests was run to investigate whether significant differences exist among clusters based on their sociodemographic characteristics (i.e. gender, age, level of occupation, employment status) and travel-related variables (i.e. the preferred type of accommodation and the length of the holiday).

Findings contribute to deepening the scientific debate about how tourists' behaviour is being transformed in a tourism era affected by the COVID-19 pandemic. Meanwhile, our results will provide accommodation marketers with useful information to be used to effectively plan and implement their service design to meet tourists' expectations and needs.

Abstract

Purpose

The purpose of this paper is to explore the influence that adopting open innovation (OI) has on the innovativeness and performance of specialized small and medium-sized enterprises (SMEs). This paper also examines the adoption of OI within a firm’s practices and models, and within the three dimensions of firm sustainability.

Design/methodology/approach

Survey data from 48 specialized SMEs manufacturing supercars were analyzed using partial least squares structural equation modeling. SmartPLS software was used to conduct a path analysis and test the proposed framework.

Findings

The findings suggest that high adoption of OI models tends to increase firm innovativeness. Similarly, the adoption of OI practices has a positive effect on innovativeness but to a lesser extent than OI models. The moderation results of innovativeness further show that OI models and practices can benefit the performance of SMEs. Specifically, two dimensions of performance – environmental and social performance – were found to be greatly influenced by OI.

Research limitations/implications

Due to parsimony in the investigated model, this study only focuses on OI adoption as practices and models without considering its drivers or other contingency factors.

Practical implications

This paper could help practitioners in SMEs better understand the benefits of adopting OI to be more innovative but also more sustainable.

Originality/value

This study contributes to the literature on the role of OI practices and models regarding the dimensions of firm sustainability performance by being the first paper to investigate this relationship in the context of small and medium manufacturers of supercars.
